Contessa Staffa Rosato, IGT Puglia, is an organic wine made from Nero di Troia grapes. Its name refers to the owner of the farmhouse where the winery is currently located. A Mediterranean wine par excellence, it was created to contrast (with pleasure) the hot summer days. Today, however, thanks to its great adaptability and versatility in the kitchen, it is now totally unseasonalised. There are even those who define it as a wine characterised by a fresh taste like a white wine but with the aromatic liveliness of a red. After a 6-hour maceration with the skins, the must obtained is cold clarified and fermented at a controlled temperature in steel tanks. The result is a magnificent goblet characterised by a beautiful pink colour with onion skin tones. The nose offers splendid sensations of strawberries and other small red fruits. In the mouth, however, it impresses with its savouriness, aromatic persistence and the right balance between freshness and soft notes. Perfect with almost everything, it is an excellent aperitif. With sushi it is a "must", but it should also be tried with a tasty fried fish. Finally, it is also perfect with chicken salads and veal with tuna sauce.
Since 1993, the year of their first harvest, the Di Tuccio family, the soul of the Antica Enotria company, has been cultivating their land with love. Preserving the tradition of taste, with a single objective: the genuineness of the products. This is why, right from the start of their adventure, they decided to obtain organic certification. After all, organic farming is a lifestyle choice for the family, not just a simple cultivation method. Just as the wine they produce is the result of a process that tells the story of the bond between man and land. Antica Enotria is located in Cerignola, Apulia. Here, a fortunate and unrepeatable mix of climatic conditions, soil and air allow the grapes grown in their vineyards, which extend from the hinterland almost to the sea, to reach full maturity. Aromas and flavours that are enhanced thanks to a careful selection process and to the modern processing cellar located inside the ancient Contessa Staffa farm, a noble building dating back to 1700.
