Another fine rosé signed by the Antinori family. We are talking about Furia di Calafuria, Salento IGT, proposed here by the Tormaresca winery. It comes from an unusual blend of Negroamaro, Cabernet Franc and Syrah grapes, all grown on the Maime Estate in the heart of Salento. The grapes, hand-picked and selected separately by variety, are destemmed and soft-pressed. The must obtained is cooled to obtain a natural clarification. It is then sent for fermentation in stainless steel tanks. Then, after a few months of ageing, again in stainless steel, in contact with its own yeasts, the various parcels are assembled to proceed to bottling. In the glass, Furia di Calafuria has a delicate pink, peach blossom colour. The nose is attractive, with notes of nectarine, pineapple and pink grapefruit accompanied by floral sensations of violet and lemon balm. In the mouth, however, it is pleasantly fresh, savoury and characterised by a pleasant citrus aftertaste. A versatile wine, it goes well with a wide variety of dishes. Perfect as an aperitif, it can also be served with hors d'oeuvres, fish or meat dishes and vegetarian dishes. For lovers of regional pairings, Furia di Calafuria goes well with burrata, for example. More generally, this wine goes well with sushi, sashimi and raw fish.
