    • Sensations Deep ruby red in colour, the nose expresses an intense and fine bouquet with fruity and balsamic notes of Mediterranean scrub. In the mouth it is fresh, with fragrant fruit and a fine ripe tannic texture. The finish is persistent. It goes well with pasta dishes dressed with meat sauces.
    • Vinification After harvesting, fermentation takes place in steel vats at 24-26 °C for about 10 days. The wine matures 6 months in cement and after bottling, completes its refinement with 3 months in the bottle before release.

      "Is Solus" Carignano del Sulcis DOC 2023
    • Is Solus is a fountain of Roman origin in the historic centre of the municipality of Sant'Antioco. The label of this Carignano del Sulcis DOC from Cantine Sardus Pater depicts a mosaic in the town's archaeological museum, showing two beasts drinking from the vase from which the tree of life rises. 100% Carignano, the grapes come from the island of Sant'Antioco, in traditional vineyards located at sea level. Here the vines are still bush-trained, free-range. After the harvest, the grapes are brought to the cellar to be processed within a few hours. We then proceed with the fermentation phase in steel tanks, for about 10 days. At the end of this delicate phase and after racking, the wine matures for about 6 months in cement vats and, after bottling, completes its ageing cycle with a further 3 months in the bottle, before being definitively put on the market. Deep ruby red in colour, the nose reveals an intense and fine bouquet with fruity and balsamic notes of Mediterranean scrub. In the mouth, however, it is fresh, with fragrant fruit and a fine ripe tannic texture. The finish, as it should be, is persistent. It goes well with first courses dressed with meat sauce or with simple but tasty roast beef.

      Cantina Sardus Pater is a cooperative founded in 1949. Today, it can count on the cooperation of about 200 members who work about 300 hectares of their own vineyards. The winery's main vocation is to produce the prized Carignano del Sulcis, with grapes harvested in historical vineyards that are still free-range. The members follow all stages of production, from the cultivation of the vines, through the production phase, to wine ageing and bottling. The production process follows traditional cultivation techniques that, combined with modern technologies and strict quality controls, allow for a fully certified production.
