Timeless elegance, from the heart of Tasmania. This is Bin 23 from Penfolds. Tasmania is an unspoilt island that, with its cool climate and varied soils, offers ideal conditions for growing Pinot Noir. Renowned for its breathtaking landscapes and biodiversity, wines of exceptional quality are produced here. The climate is cool, influenced by the Antarctic Ocean. This allows the grapes to ripen slowly and perfectly, enhancing the aromas and maintaining a lively acidity. The soils, composed of mineral-rich clays and volcanic substrates, give the wine a unique minerality and inimitable aromatic complexity. Bin 23 is made from 100% Pinot Noir grapes, a delicate and refined vine that finds in this remote land an ideal environment to express all its elegance. Harvested by hand, the grapes undergo a gentle fermentation to preserve the fine varietal aromas. The wine then matures for 12 months in American oak ‘hogsheads’ that add spicy and vanilla notes to the finished wine, without overpowering its fruity and mineral characters. In the glass, it has a beautiful strawberry red colour, bright and inviting. On the nose, it offers a complex and nuanced bouquet. Cherries, strawberry sorbet and blueberries emerge to the fore, well supported by hints of oak. Earthy notes of undergrowth, bramble and truffle add depth, while more savoury hints of wet slate and river pebbles complete the aromatic profile. In the mouth Bin 23 offers a nice texture, with fine, delicate tannins. The acidity is firm, making the wine lively and well balanced. Cherry, black cherry and cranberry aromas blend harmoniously, with a subtle bitter finish that gives this Pinot Noir complexity and persistence. Good today, this Australian red has excellent ageing potential. It will evolve beautifully over the next 5-10 years, developing further complexity and aromatic nuances. Ideal with white meats such as chicken and turkey, but also with mushroom dishes, soft and lightly matured cheeses, and even fatty fish such as salmon.
