    • Sensations An intense ruby red colour. The bouquet is mainly fruity, with hints of sour cherry and red fruits such as currants and cherries, but also raspberries. This is followed by notes of aromatic herbs and spices such as pepper, cloves and cardamom. On the palate it is full-bodied, with medium tannins, fresh and balanced. Long aromatic persistence.
    • Vinification Once harvested by hand, the grapes were vinified in stainless steel tanks at a controlled temperature (max. 26°C) and fermentation was spontaneous. Maceration on the skins allowed for a perfect extraction of polyphenolic substances, aided by frequent pumping over in the initial stages of fermentation, interrupted by a ‘delestage’ in the intermediate phase, and then resumed in the final phase. The malolactic fermentation was completed in steel before winter. The maturation in 50 hl oak barrels lasted, as usual, 24 months. Before being released on the market, Calimai was aged in the bottle in our cellar for the following 4 months.

    • The Vino Nobile di Montepulciano DOCG produced by Tenute Calimaia, part of the prestigious Frescobaldi family, combines the richness of the Montepulciano territory with the centuries-old experience of the historic wine family. A high level wine making experience. Located among the rolling hills that separate the Val di Chiana from the Val d'Orcia, Tenuta Calimaia extends over about 70 hectares in the historic area of Cervognano, one of the most renowned areas for the production of Vino Nobile di Montepulciano. At an altitude of about 300 metres above sea level, the estate can count on soils of Pliocene origin, poor in organic matter and rich in clay. Vino Nobile di Montepulciano was one of the first Italian wines to obtain the DOCG (Denominazione di Origine Controllata e Garantita) designation, testifying to the quality and tradition that characterise this wine. The strict regulations require the prevalent use of Sangiovese grapes, locally called Prugnolo Gentile, and a minimum ageing period. The one proposed here is made up of 90% Sangiovese and the remaining 10% of complementary red grape varieties. The grapes are harvested by hand and vinified in temperature-controlled stainless steel tanks, with spontaneous fermentation. Maceration on the skins, accompanied by frequent pumping over and an intermediate délestage, ensures perfect extraction of the polyphenolic compounds. The malolactic fermentation is completed in steel before winter. The wine is then aged for 24 months in 50-hectolitre oak barrels, followed by a further 4 months of refinement in the bottle before being released on the market. This process combines traditional techniques with modern practices to enhance the intrinsic characteristics of the wine. In the glass it has a surprisingly intense ruby red colour and a bouquet dominated by hints of red fruit, such as sour cherries, blackcurrants, cherries and raspberries, accompanied by notes of aromatic herbs and spices such as pepper, cloves and cardamom. Finally, in the mouth it is full and enveloping, with fine tannins, freshness and balance. The finish is long and pleasant, leaving a sensation of harmony and satisfaction. Good already today, with time it will develop greater complexity and harmony, making it ideal for those who appreciate mature and refined wines.
