Frédéric Savart's Champagne Grand Cru Éphémère 025 Nature represents the meeting of tradition and innovation. It is the result of a collaboration between Frédéric Savart and Drémont Père & Fils, combining the expertise of two families dedicated to quality viticulture. The grapes used for its production come exclusively from villages classified as Grand Cru, located in some of the most renowned areas of the Champagne region. For the Chardonnay, in particular, the villages of Avize, Cramant, Le Mesnil-sur-Oger and Oger, located in the Côte des Blancs, are known for their chalky soils that give minerality and finesse to the wines. The Pinot Noir, on the other hand, comes from Ambonnay and Bouzy, Montagne de Reims, areas famous for producing grapes with structure and depth. An interesting fact: only 17% of the vineyards in the Champagne region have the prestigious Grand Cru designation, which is reserved for areas with the best soil and climate conditions and a long-standing reputation for excellence. Specifically, the Éphémère 025 is a blend of 74% Chardonnay and 26% Pinot Noir. After a soft pressing, the musts ferment separately in stainless steel tanks and oak barrels, allowing the purity of the fruit to be preserved and adding complexity to the wine. The maturation on the lees lasts for a minimum of 36 months, during which time the wine develops depth and character. Being a Brut Nature, no dosage is added, thus enhancing the natural expression of the terroir. In the glass, Éphémère 025 has a bright straw yellow colour and a fine, persistent perlage. On the nose, aromas of fresh fruit, such as green apple and citrus, emerge, accompanied by delicate floral notes and a subtle minerality. In the mouth, on the other hand, we discover a lively acidity balanced by a creamy texture, with flavours reminiscent of white-fleshed fruit and a long, savoury finish. Extremely versatile in gastronomic pairings, this Champagne goes well with appetisers and first courses based on white fish, such as carpaccio, tartare or seafood risotto.
