An indigenous vine variety that has been around since Roman times, Refosco dal Peduncolo Rosso is one of the symbols of Friulian oenology. It is one of the few red wines that can divert the attention of wine lovers from the many (and good) white wines of the region. After the harvest, the selected grapes are quickly brought to the cellar for processing. The processing begins with destemming and maceration on the skins, which continues for about a week. In the meantime the temperature is kept low, around 4 degrees. This is followed by a short fermentation, in stainless steel, and a maturation and refinement phase, also in stainless steel, which continues until spring. This technique allows Collavini to obtain a red wine of great freshness, suitable for various combinations. From white carmi, for lovers of tradition, to tastier fish such as eel, blue fish, turbot and, why not, even traditional fish soups.
