Per' ’e Palummo, the traditional name for Piedirosso, is one of the jewels of the island of Ischia. The one proposed here by Cenatiempo is a particularly interesting wine that originates from vineyards located on different sides of the island, from lower plots to those at 450 metres above sea level. In common is a unique soil of ancient volcanic origin. Ischia DOC, this is one of the most prestigious appellations in Campania whose borders coincide with those of the small green island. Wines strongly influenced by the territory and the Mediterranean climate. For ‘e Palummo in purity, the grapes are hand-picked in October and, after a brief maceration on the skins of 4-6 days, the must is fermented in steel at a controlled temperature. The wine then remains on the lees for 4 months, maturing in cement and steel tanks, and then completes its ageing in the bottle for one month. Vinous and enveloping bouquet, it is characterised by notes of fresh fruit, especially cherry, which intertwine with floral hints. In the mouth it is dry, well structured and with good persistence. The tannin is soft and makes it also suitable for pairing with fish dishes, dispelling the myth that red wines cannot be paired with ‘seafood’ dishes.
The Cenatiempo winery, Vini d'Ischia, was founded in the first half of the last century and has always been a point of reference for the production of wines capable of expressing the authenticity and richness of the territory of the small Campania island. The winery, which dates back as far as the 17th century, is carved into the hillside. Although the winery has grown and modernised over the years, it has always maintained a family-run approach. The vineyards extend on terraces at various altitudes, from the coast to 600 metres above sea level. Viticulture here requires intense manual labour, thanks to which it has been possible to preserve unique native varieties such as Biancolella and Piedirosso, locally known as Per' ’e Palummo. Ancient vines that have adapted perfectly to the island's climate and give rise to wines with an unmistakable character.
