      "L'ultimo Baluardo" Cesanese Nero Lazio IGP 2021
    • It comes from the hills of Castelfranco, in the heart of Lazio. L'Ultimo Baluardo, Cesanese Nero Lazio IGP by Cantina Le Macchie represents a true oenological rediscovery. A wine that defies time and tells of its deep connection with the territory. Castelfranco, between Mount Terminillo and the Conca Reatina, offers a unique terroir for the cultivation of Cesanese Nero. Here the soils are of ancient volcanic origin, rich in minerals, ideal for the ripening of grapes rich in aroma and structure. The Cesenese Nero, once a grape variety widespread throughout Lazio, had almost been lost. Cantina Le Macchie, with tenacity and passion, decided to recover and enhance it, resulting in this interesting wine. L'Ultimo Baluardo is the result of careful and meticulous vinification. The grapes, harvested at the end of October, undergo a long maceration on the skins to extract the maximum colour and aromas. This is followed by fermentation at a controlled temperature and ageing in 20 hectolitre Slavonian oak casks for 12 months. A further 6 months of bottle ageing completes the maturation process, giving the wine elegance and complexity. Notes of liquorice, ripe red fruits such as blackberry and blackcurrant intertwine with hints of sweet spices, black pepper and tobacco. In the mouth it conquers with its firm structure and character. Elegant and well-integrated tannins support a rich and persistent body, resulting in a long and satisfying sip. It is exquisite with savoury red meat dishes, such as roast lamb, sliced beef and Florentine steaks. It is also excellent with mature cheeses and first courses with meat sauces.

      We are in the Castel Franco area, in the heart of Lazio, one of the many corners of Italy with a truly optimal habitat for vine and olive cultivation. Here, Cantina Le Macchie, owned by the Di Carlo family, can now count on vineyards that extend over the hills between the Rieti basin and Mount Terminillo. The altitude is between 610 and 1075 metres above sea level, with good exposures towards the south occupied by the later varieties, and others towards the south-west where the more precocious varieties are found. A soil rich in minerals favours the growth and development of high quality grapes. It produces wines characterised by a beautiful freshness and flavour. Given the altitude of the vineyards, their slope and the difficulties of working them, the Cantina is a member of Cervim, the certification body for Eroica viticulture.
