  • Sensations The nose touches on aromas of cherries, strawberries, raspberries and light earthy notes. The palate shows red currant, rhubarb, violets and hints of vanilla.
  • Vinification After harvesting, the cold begins to extract colour and flavour. Fermentation begins at a controlled temperature of 24 degrees and ends at 20 degrees. During these 10 days the cap is regularly submerged. This gives the wine even more colour and flavour. The wine then matures further on stainless steel, with brief contact with wood.

  • Modern in concept and appearance, this Pinot Noir Aussie is certainly not inspired by the serious models of Burgundy. A wine designed and produced to be enjoyable just a few months after release. A wine that plays everything on the richness of its aromas and ease of drinking. Vinification is simple and involves maceration of the skins for about a week. During the entire time the cap is constantly kept in motion to encourage all possible extraction of color and tannins. After racking, a quick refinement in barrels follows and then off to be bottled. The result? A bright and lively ruby red. A richly fruity nose with clear aromas of cherries, strawberries, raspberries and a slight hint of underbrush. In the mouth, the fruity character perceived earlier is found again, with a subtle hint of vanilla that makes it more intriguing.
