Torcicoda, Salento IGT, is a very contemporary interpretation of Primitivo. After pressing, maceration lasts for about two weeks in stainless steel tanks. During this phase, the wine completes alcoholic fermentation at a controlled temperature not exceeding 27 °C and is then transferred to French and Hungarian oak barriques, where malolactic fermentation takes place. For the final stage of maturation, Torcicoda is left to mature for approximately 10 months in barriques, and a further 6 months in bottles. Only then is the wine ready to be released on the market. Intense ruby red in colour with a light shade of violet, the nose is striking for its intense fruity notes of morello cherry and plum which combine with sweet spicy sensations of liquorice and vanilla. In the mouth the entry is soft and ample, with an elegant tannic texture that well accompanies a remarkable structure. The finish is long and persistent with a pleasant aftertaste of cherries in alcohol.
