  • Vinification Once harvested by hand, the wine is gently pressed. The must is left to settle for a few days at a low temperature to allow the herbaceous substances to precipitate, leaving the must clean and ready for fermentation. This process takes place in stainless steel tanks at a controlled temperature (18-20 °C) for 15-25 days. Once fermentation is complete, the wine remains for 9 months in steel vats in contact with its lees and finally another 8 months in the bottle.

  • Grechetto di Civitella d'Agliano IGT, Poggio della Costa di Sergio Mottura is a tribute to the winemaking tradition of the Tuscia viterbese area. An organic white wine that comes from the estate's vineyards in Civitella d'Agliano, in the province of Viterbo, between the hills of the Latium hinterland and the Tiber river valley. Here the soil is of volcanic origin and gives the wine a unique structure. The absolute protagonist is Grechetto, an indigenous grape of the area, known for its ability to express freshness and minerality. Specifically, it is a selected clone (G109) used to create the Poggio della Costa vineyard, planted in 1970. Seven hectares in total, facing east, at an altitude of 140 metres. Here the plants were carefully chosen by local sharecroppers who had cultivated Grechetto for generations. This deep bond with tradition then merges with innovation. In fact, the company has long adopted sustainable agricultural practices to respect the environment and obtain high quality grapes. After vinification, this Grechetto matures for 9 months in steel tanks, in contact with the fine lees. Then, after bottling, it rests for a further 8 months in bottle before being released on the market. Bright straw yellow in colour, this white reveals delicate and fragrant aromas, with notes of fruit and white flowers that recall the freshness of the surrounding nature. In the mouth, it is clean, with a well-balanced acidity that enhances its youthfulness. The finish is long and persistent, with a pleasant mineral note that recalls the volcanic origins of the area. Best served with fish starters, salads and vegetable dishes. Also excellent with fresh cheeses and white meats.

    Sergio Mottura portrays his company, which is careful to favour the responsible use of natural resources, with the porcupine, a sober animal with refined tastes that lives exclusively in places where there is an ecological balance. Bounded by the hills and clayey gullies of Civitella d'Agliano and the Umbrian plain bathed by the Tiber, the estate has belonged to the Mottura family since 1933. One of the areas most suited to the production of Grechetto grapes, today the estate covers about 130 hectares, in an area rich in natural resources. The wine vocation of these hills was known as far back as 1292, when in the registers of the Orvieto cadastre this was defined as one of the most chosen areas for the production of the wine of the same name. Under the guidance of Sergio Mottura, the old original plantings of maritata vines were replaced by specialised vineyards using modern structures and criteria. Today, the vineyards represent about 36 hectares, mainly planted with indigenous varieties that have always been present in the area. The long cultivation in the same environment has resulted in a natural selection of the species that best defend themselves against local pathogens, thus allowing for better management of organic farming.
