This is one of those wines that certainly does not go unnoticed. Starting with its bottle, beautiful, transparent, with a stylised coral decorating the front. Aka Charme, Rosato Spumante Brut, proposed by Produttori di Manduria, is a Charmat Method, i.e., a bubble wine processed in an autoclave, which allows us to confirm once again the versatile nature of the Primitivo grape, capable of giving us full-bodied, complex reds, but also very pleasant rosés, still or, as in this case, sparkling. As is easy to guess from the grape variety's name, harvest time comes early, as early as mid-August. Vinification in white, for the base, after pressing, the delicately rosé must is sent to primary fermentation, in thermo-controlled steel tanks. This is followed by maturation on its fine lees, at least until the end of October. The wine is then transferred to an autoclave, where secondary fermentation takes place, and subsequent ageing on the lees, for a total period of approximately 120 days. A brilliant and intense rosé colour, this sparkling wine is characterised by a fine and elegant perlage. The nose presents itself with good intensity. Hints of small red fruits accompanied by floral notes of rose, bread crust and yeast. In the mouth, thanks to the pleasant effervescence and excellent acidity, it is particularly fresh and lively, appropriately soft, balanced and fragrant. Perfect as an aperitif, at table it goes well with raw langoustines and red prawns. For those seeking a marriage of greater 'substance', this Aka Charme is also perfect with the classic aubergine parmigiana.
