The vineyards used to produce Albizzia are located at between 500 and 700 metres above sea level, in areas with clayey soils of Pliocene origin, poor in organic material. These soil and climate conditions favour optimal ripening of the grapes, giving the wine freshness and aromatic complexity. The grapes are harvested by hand during the coolest hours of the day, thus preserving the freshness and aromatic integrity of the fruit. After harvesting, they are quickly taken to the winery where they undergo a soft pressing to extract the free-run juice. Fermentation takes place at a controlled temperature in stainless steel tanks, preserving the delicate aromatic notes of the original fruit. The wine is then aged for three months in the same tanks, thus maintaining its freshness and liveliness. In the glass Albizzia has a delicate straw yellow colour. The nose reveals a fruity bouquet, with notes of citrus fruits, green apple and hints of exotic fruits. There are also perceptible floral hints of camomile and light balsamic notes. In the mouth it is balanced, with a pleasant acidity and a discreet sapidity in the finish, making it fresh and harmonious. Conceived to be appreciated young, this Tuscan Chardonnay lends itself to different pairings. Ideal as an aperitif, it goes well with fish, vegetables and fresh cheeses. Its freshness also makes it suitable for tasty fried foods, enhancing the flavours without overpowering them.
