La liebre y la tortuga, or the hare and the tortoise, is not only a famous children's fairy tale but also a beautiful aromatic white made from 100 percent Albariño grapes from the best vineyards in the Condado region. We are in Galicia, in the far north of the Iberian Peninsula, a few kilometers from the Atlantic coast. In this case we are in the innermost part of the DO Rías Baixas, with a moderately warmer climate than that found on the coast. The soil is composed of granite and slate that allow the grapes to fully ripen. They are hand-picked in the morning to preserve aromaticity and freshness as much as possible. The must is fermented using yeasts that enhance its primary varietal aromas and is then cold stabilized and filtered. La liebre y la tortuga presents itself in the glass with a classic straw yellow color with greenish reflections. It is a refreshing and pleasantly fruity wine. The mouth reveals beautiful acidity and intense aromaticity. Raw fish, oysters and seafood are natural pairings for this fun Galician white.
