Sarticola is a Vermentino Colli di Luni in purity, obtained by careful processing of grapes from the historic vineyard located in the locality of the same name, on the heights of Castelnuovo Magra, about 330 metres above sea level. We are in an enchanted place, immersed in enchanting Mediterranean scrub, in a well-sunlit oasis, where the particular microclimate characterised by a significant temperature range and constant ventilation, thanks also to the influence of the sea, give the grapes unique characteristics. The harvest is slightly late and, thanks also to a pre-fermentation maceration, a Vermentino Cru is obtained that expresses the excellence of the Lunigiana territory. After 24 hours, the grapes undergo soft pressing to extract only the flower must. This is followed by fermentation at a controlled temperature and a 90-day rest on the fine lees. Straw yellow with golden hues, this Vermentino reveals aromas of fresh yellow-fleshed fruit, such as apple, peach and banana, then tropical fruits and distinct floral hints with a mineral finish. On the palate, it is dry, warm and well-structured, with soft tones and a very long persistence. On the table it accompanies fish dishes, trofie with pesto or white meats.
