  • Today we are in Orschwiller, in the heart of Alsace. This is the home of Domaine Allimant-Laugner, which produces excellent local wines. Alsace is a fascinating region, characterised by a hilly landscape at the foot of the Vosges Mountains, with a semi-continental climate offering hot summers and cold winters. This climate allows the grapes to ripen slowly and regularly, preserving their acidity and fresher aromas. Pinot Gris, in particular, is one of the region's emblematic grape varieties, known for its ability to produce rich and complex wines. The result of a winemaking process that respects tradition, the grapes are harvested by hand at the right stage of ripeness. After the harvest, they are gently pressed to extract the must. Fermentation takes place at a controlled temperature to preserve the delicate fruity aromas and freshness of the wine. Subsequently, the wine matures on its own fine lees, enriching itself in terms of complexity and structure. In the glass, Domaine Allimant-Laugner's Pinot Gris has an inviting golden yellow colour. On the nose, the bouquet is open and pleasant, dominated by notes of dried apricot, honey and sweet spices. In the mouth, it is dense and long, with a soft structure and a lingering finish. It also goes well with cheeses from the region, especially soft, washed cheeses such as Munster.
