Bisù is a Sauvignon with singular characters. The right combination of aromatic richness and taste persistence. The vineyard from which the grapes come in this case is a plot located in the municipality of Altavalle, 602 metres above sea level, which enjoys a warm, dry microclimate that is particularly favourable for growing Sauvignon. The soil here is volcanic in nature, draining and rich in minerals, favouring the 'smoky' component of the wine. Harvested by hand in the second ten days of September, the grapes are initially pressed softly in an inert atmosphere. The must obtained is clarified by means of static decantation and is then sent to the fermentation phase, at a controlled temperature, in stainless steel tanks. At the end of this phase, the wine matures on its lees for a period of approximately 8 months in second and third passage French oak tonnaux. After bottling, the wine then matures further in the cellar for a further 6 months before release. Brilliant straw yellow, this Bisù is a white wine with a delicate bouquet of elderflower, lychee, mango and exotic fruit. In the mouth, it is pleasantly drinkable and fresh. Almost thirst-quenching. A wine with a forthright and decisive personality typical of the mountains, it is suitable as an aperitif. On the table, however, it calls for dishes with a strong flavour. Excellent with fatty fish and delicately spiced dishes.
