Taste: In the mouth it unleashes all its elegance, very structured, with fine and well-smoothed tannins, enveloping m well decided. It still reveals a balanced minerality and a pleasant final freshness. It shows great complexity still in the making for this long-ageing Pinot Noir.
    • Vinification Vinification system: cold maceration on the skins for 4-5 days. Alcoholic fermentation: in stainless steel at 20°-22°C. Malolactic fermentation: completely carried out in wood. Ageing: 15 - 18 months, tonneaux and large barrels, then in bottle for a minimum of 15 months.

      "Maxima" Pinot Nero Piemonte DOC 2015
    • Maxima is the Riserva, produced only in the best vintages, from Colombo. The name, of Latin derivation, refers to antiquity, when the Roman Empire's interest in the finesse of grapes from Bubbio was already noted. It also represents the highest expression of quality. A very structured wine, this Pinot Noir undergoes a long ageing process and conceals a balanced minerality and a delicate final freshness. Cold maceration on the skins for 4-5 days, alcoholic fermentation takes place in stainless steel, followed by malolactic fermentation, which is completely carried out in wood. At the end of transformation, the wine matures for about 18 months in tonneaux and large barrels and, after bottling, continues with bottle ageing for a minimum of 15 months. Intense ruby red in colour, the nose reveals a very elegant, complex and intense bouquet, with immediate and clearly perceptible currant notes. Then black cherry, typical notes of fresh red fruits and a floral note reminiscent of violets. In the mouth, it unleashes all its elegance. The great complexity reveals that this Pinot Noir is destined for long ageing.
