Genesis, meaning creation, and this is the name that Cantine Sant'Agata wanted to give to this intriguing Ruchè di Castagnole Monferrato. A refined red wine, it comes from a pure processing of Ruchè grapes. Harvested by hand in small crates, these are stacked exposed in the best ventilated areas. Here the grapes wither thanks to the autumn breezes until the end of the harvest. It is then destemmed by hand and softly crushed. Fermentation in contact with the skins lasts 18 to 20 days, with daily punching-down. Malolactic fermentation takes place during the ageing period, which lasts a minimum of 30 months, directly in the barriques where the wine matures. After ageing in wood, Genesi matures in the bottle for at least 6 months before release. Rich ruby red with nuances tending towards garnet, the aromatic persistence on the nose is enthralling. The surprising delicacy of the bouquet reveals oriental spices such as cumin, cardamom and pepper. In the mouth, it is warm, with exceptional balance and softness and a long aromatic persistence. The name refers to a votive pillar placed by a wealthy family in honour of Sant'Agata right in front of the winery.
