A Nebbiolo d'Alba DOC, Paisan, proposed here by Bersano. A red from the territory that comes from grapes grown in vineyards where the calcareous soil with a fine clay-loam component offers ideal conditions for the ripening of grapes rich in aromas. Also contributing to the full ripening of the fruit is the climate, which here is characterised by cold winters and warm but breezy summers, with significant temperature swings. Nebbiolo, indigenous to Piedmont, is known for its strong personality and great ageing potential. The grapes are harvested by hand in boxes in the second ten days of October, to be immediately subjected to careful vinification in temperature-controlled steel tanks. It begins with a phase of maceration on the skins for a variable period, and alcoholic fermentation. Repeated pumping over and oxygenation favour homogenous maceration and improved aromatic complexity. At the end of alcoholic fermentation, the wine is drawn off and left to rest on the fine lees to promote malolactic fermentation, which gives the wine softness and pleasantness. This is followed by a minimum ageing period of 12 months in large oak barrels, which gives the wine complexity, elegance and harmony. The wood gives the Nebbiolo d'Alba DOC Paisan spicy, toasted and vanilla notes, which perfectly complement the fruity and balsamic scents typical of the vine. A further refinement of 6 months in the bottle allows the wine to harmonise and reach its full expression. Intense red in colour with garnet hues, the nose reveals an intense and persistent perfume, slightly spicy, with hints of undergrowth, liquorice, violets, dog rose and cooked fruit, such as plum and cherry jam. In the mouth, it reveals a beautiful structure and great elegance. The tannins are well blended and give an enveloping and persistent sip. Excellent with elaborate first courses, it goes well with risottos, braised meats, roasts and game.

Here, without forgetting the strength of tradition, quality grapes are still produced from which typical wines of the region are made. Particular attention has always been paid to the wood for ageing, the company's true asset. Cantine Bersano, in fact, keep large oak casks and tonneaux where, thanks to the constant temperature and humidity, the wines mature slowly for years. Today Bersano is considered one of the most important wineries in Piedmont.
