Two Hands' Sexy Beast is a “succulent and fascinating” Cabernet Sauvignon, as its creators call it, that perfectly expresses the potential of the terroir of McLaren Vale, Australia. This is one of South Australia's most celebrated wine regions, known for its extraordinary ability to produce high quality wines. Located just a few kilometres from the ocean, McLaren Vale benefits from a Mediterranean climate, with hot, dry summers and mild winters. The proximity to the sea and cool sea breezes help moderate temperatures, promoting slow and even ripening of the grapes. This produces wines with great aromatic intensity and a perfect balance between sugars and acidity. Here the grapes are crushed and fermented in open containers, with frequent pumping over. Even three times a day, during the peak of fermentation. This allows colour, flavour and tannins to be extracted. After fermentation, the wine is pressed and transferred to oak barrels for ageing. Sexy Beast reveals a medium body, initially displaying the classic austerity of Cabernet Sauvignon, but quickly evolving to reveal the generosity typical of McLaren Vale. Dark berries, ripe and seductive tannins. Then notes of cassis, hints of red and blackcurrants, floral hints and a hint of incense. Although Sexy Beast is meant to be drunk young, it has great ageing potential. With at least 5 years of cellar ageing, the wine will develop further complexity, with tertiary aromas enriching the taste experience. Today it is ideal with grilled red meats, roasts, game and mature cheeses. Its fruity and spicy notes are a perfect match for intense flavours.
