In the hills of Alto Adige, where time seems to stand still. Here, amidst the evocative ruins of Casanova Castle, amidst vineyards kissed by the sun and caressed by the fresh mountain breeze, Nova Domus is born, a DOC Alto Adige white wine that encapsulates the essence of a unique territory and the passion of a winery of excellence. Fruit of a blend of 70% Pinot Bianco, 25% Chardonnay and 5% Sauvignon Blanc, each variety gives the wine its best characteristics. The Pinot Bianco, in particular, gives structure and aromaticity, the Chardonnay elegance and softness, the Sauvignon Blanc freshness and mineral notes. Harvested by hand, the wine is softly crushed in the cellar, followed by slow fermentation in large wooden barrels and maturation on fine lees. Every stage is taken care of down to the smallest detail to enhance the unique characteristics of this wine. Brilliant straw yellow, on the nose Nova Domus offers a complex and fascinating bouquet that ranges from herbaceous and spicy notes to fruity hints, enhanced by elegant mineral notes. On the palate it is structured and complex, with a creamy, smooth flavour that contrasts with the aromatic and mineral notes, creating a captivating symbiosis that lingers long in the aftertaste.
