Schola Sarmenti's Primitivo di Manduria Chiacchierino was born in a vocated land, appreciated for its wines with intense flavours. We are in Manduria, Apulia, a land of robust and complex wines that are born thanks to a sunny climate and an ideal terroir for growing Primitivo. Hot, very hot, dry summers, with days when the temperature is mitigated by a constant sea breeze. Perfect conditions for optimal ripening of the grapes, especially Primitivo, known for its early ripening but capable of producing powerful, structured wines, particularly appreciated for their softness and aromatic richness. In this case, the grapes used for Chiacchierino come from historic vineyards, with vines over 65 years old, still cultivated using the Apulian alberello system, a traditional technique that allows the plants to express their full potential. With about 4,500 plants per hectare and a yield of about 1 kg per plant, production is deliberately limited to guarantee maximum quality. Harvesting is done manually, picking the grapes when fully ripe and delicately placing them in small aerated boxes to preserve the integrity of the fruit. After fermentation, the wine matures for a full 24 months in French oak tonneaux, a process that enriches it with aromas of vanilla and sweet spices, without overpowering the natural fruit intensity of the grapes. This long maturation in wood contributes, however, to giving Chiacchierino a complex and velvety structure. This Primitivo di Manduria has great ageing potential. Over the years, it evolves in an extraordinary way, developing more complex notes of leather, tobacco and chocolate, while retaining its softness and depth. For those who know how to wait, tasting this wine years later will be an unforgettable experience.
