From hillside vineyards located in the communes of Lazise and Bardolino, to the east of Lake Garda, Santa Sofia obtains the grapes with which it produces this typical Bardolino DOC Classico. Corvina, Rondinella and Molinara, in gradually decreasing percentages, this red wine of the territory is the result of a careful processing that includes first the destemming and soft crushing of the grapes, followed by a phase of maceration of about 7 days in stainless steel tanks. Then, after racking, in the following autumn, the wine undergoes malolactic fermentation and, after a brief period in stainless steel, is ready to be bottled. The colour is ruby red with slight violet reflections and the nose is heady and vinous. It releases memories of sour cherries and raspberries, then liquorice root and leather. In the mouth it is pleasantly slender, finely tannic, with a pleasantly bitter finish. Juicy, crisp, fresh and persistent, it goes well with mushroom-based first courses and white meats. The Garda tradition, however, wants it to be paired with (white) polenta and stockfish.
