Once upon a time, there was Muscat. And luckily there still is. Especially the good ones, like this one proposed by Losito & Guarini. Province of Pavia PGI, this aromatic white wine is produced from Moscato bianco grapes that grow around the 45th parallel, which is halfway between the North Pole and the equator. After harvesting, which is done by hand, the grapes are taken to the winery to undergo the classic pressing and cryo-maceration process to preserve all the subtle aromas of the fruit. This is followed by fermentation at a controlled temperature with selected yeasts, and an ageing phase always in thermo-conditioned steel. Before being bottled, the wine is sent through a second phase of natural fermentation in an autoclave to make it pleasantly petillant. Intense straw yellow, with greenish reflections, the nose reveals all the goodness of its varietal, with delicate scents that recall acacia flowers and honey, but also peach, apricot and citrus. In the mouth it is sweet but balanced. Pleasantly fresh, it is the wine to pair with grandma's classic apple pie.
The story of Losito Guarini is a beautiful Italian story. It began back in 1910 when a very young Domenico Losito left Trani in search of fortune. He arrived in Seveso, north of Milan, where a few years later he opened a tavern. It sells, of course, wine by the glass, in this case served in the typical "scudela", accompanied by the specialties cooked by his wife. From one goal to the next, Domenico's business grows and prospers, and from the initial tavern it becomes a small company that combines the restaurant with the activity of selling wine at home. And so we reach 1968, when Luisa, Domenico's granddaughter and Michele's daughter, marries Mr. Guarini, also of Apulian origin, who sold wine wholesale in Como. At that point Losito Guarini is ready to make the great leap in quality, thanks to the construction of new and more modern bottling plants. In the nineties, finally, the new generations were involved in the family business, represented by Davide and Renato, and a new branch was opened in Oltrepò. Today Losito Guarini produces about 25 million bottles a year, obtaining numerous awards from national and international wine and food critics.
