The "Provencal style," for wine lovers has only one meaning. A delicate, and fresh, rosé made from a blend of several grape varieties typical of the South of France. A style loved and appreciated all over the world, so much so that it is now imitated in several wine regions. In this case, Domaine de la Rouvière presents its Côte de Provence Rosé son of a blend of Cinsault, Syrah and Rolle grapes. Harvested slightly early to ensure the right level of acidity in the grapes, once they reach the winery they are immediately sent for processing. It starts with a maceration phase lasting a few hours, which is sufficient to obtain that delicate and characteristic hint of pink. Then cold pressing to bring out the full aromatic potential. This is followed by fermentation in temperature-controlled stainless steel and a quick passage in steel before bottling. This reveals a wine characterized by a beautiful, bright, light pink hue with notes of fresh fruit, grapefruit and lime. In the mouth it is refreshing, delicate but at the same time complex and has a nice structure. Excellent as an aperitif, at the table it goes well with appetizers, salads and, of course, grilled fish.
