All the charm, and taste, of a high mountain wine. In this case, the Müller Thurgau comes from vineyards in the high valley, some 687 metres above sea level. Viàch, Trentino Superiore, is a Müller Thurgau that - as stated on the Corvée winery website - ripens in the midday sun. The vineyard is a hymn to peasant ingenuity and tenacity. Recovered with mallet and pickaxe from the mountain, it is a continuum of terraces and dry-stone walls that follow the twisted course of the ridge. Harvesting, obviously by hand, begins in the second ten days of September. The grapes, delivered early to the cellar, first undergo a soft pressing in an inert atmosphere, followed by static decantation of the must. The must then undergoes temperature-controlled fermentation in stainless steel tanks, after which the wine matures on its lees for about 8 months before being bottled. A further six months of rest in the cellar then precede the release of the first bottles. A wine of great freshness and persistence, in the glass it has a beautiful straw-yellow colour. The nose is reminiscent of white flowers, especially lily of the valley and jasmine, but also of fresh mountain fruit, such as Renetta apples and Kaiser pears. In the mouth, it is fresh and well balanced. A pleasant wine to enjoy as an aperitif. Perfect with vegetarian dishes, even savoury ones, freshwater fish and risottos.
