For those in search of a great white wine for ageing, this Ciampagnis, Chardonnay Collio DOC from Vie di Romans, is an almost inevitable choice. This wine is produced from a single vineyard, called Ciampagnis, which is located in the Friuli Isonzo Rive Alte area, in the municipality of Mariano del Friuli, in the province of Gorizia. A mature vineyard, with plants of an average age of around 20 years, capable of producing bunches of beautiful concentration and aromatic richness. Harvested during the month of September, the grapes are first destemmed and undergo a cold maceration phase. Then, after clarification, we move on to the fermentation phase activated by selected yeasts. After transformation, the wine undergoes an 'elevage' phase, i.e. maturation, lasting about 8 months, in contact with its own yeasts. Then, after bottling and before final release, the wine rests in the cellar for about 9 months. The result is a beautiful white wine characterised by a fine personality and an intense straw-yellow colour. The nose reveals a rich and complex bouquet, as only a fine Chardonnay can have. In the mouth, on the other hand, one is pleasantly surprised by a wine characterised by a medium body, without smearing. What is most striking, however, is the pleasant sapid streak that makes it super fresh. Good even today, it is a white that is not afraid to spend more than a few years in the cellar.
