  • There are certainties that every sommelier (or aspiring sommelier) should never question. Among these there is the one that a white wine produced in Burgundy almost certainly derives from Chardonnay grapes worked in purity. This Bourgogne Blanc Retour des Flandres, produced by Regnard from grapes harvested in the Maconnais area, in the heart of southern Burgundy, is no exception. Produced only in the best vintages, the harvest is manual and fermentation takes place in temperature-controlled steel tanks. As is traditional for the region, the wine undergoes full malolactic conversion and is then left to mature for a few months, partly in wood and partly in steel. The result is a very pleasant white wine, characterized by a beautiful straw yellow color and a richly floral and citrus bouquet. Notes of apple, yellow fruit and hints of pastry complete the picture. In the mouth it is well structured, with slightly buttery and honeyed notes. It's good already. But it's also not afraid of being forgotten in the cellar for a few years. In 3 or 4 years' time, it will certainly be even more interesting.
