This is where Fratelli Gancia's Brachetto D'Acqui DOCG is produced, a sweet sparkling wine that comes from the heart of Piedmont, an area famous for its centuries-old winemaking tradition. We are in Acqui Terme, in the province of Alessandria, an area renowned for its Roman baths and lush vineyards. Here, the continental climate, with hot summers and cold winters, and the mineral-rich soil, create the ideal conditions for growing Brachetto grapes. The name ‘Brachetto’ seems to derive from the word ‘braco’, which in Piedmontese dialect means ‘fragrant’, a clear reference to the intense and characteristic aroma of this wine. It is no coincidence that this grape variety gives the wine it produces intense aromas of rose and ripe fruit. Specifically, those used by Gancia are carefully selected and gently pressed to preserve their unique characteristics. Vinification begins with a light maceration of the skins. The must is then partially fermented until it reaches an alcohol content of 5.5% and is then stored at -2°C until the next fermentation with the Martinotti (or Charmat) method. This method involves a slow re-fermentation in large closed containers, called autoclaves, at a controlled temperature, which gives the finished wine a delicate effervescence and a fine, persistent foam. A lively red, Brachetto D'Acqui has a musky and delicate aroma on the nose, with notes of rose and ripe fruit standing out. In the mouth it is sweet, soft and fragrant, with a fresh and lively aftertaste that makes it irresistible. To be drunk strictly young, Brachetto d'Acqui is perfect as an aperitif, but it also lends itself to being paired with chocolate desserts, fresh fruit or cream-based desserts. It is also an excellent base for fresh and thirst-quenching long drinks.
