The pleasure of a fresh and fragrant bubble, obtained from an indigenous Sicilian grape variety. Long gone are the days when Sicilian wines were recognised above all for their power and lack of finesse. Today, thanks to increasingly delicate and precise wine-making techniques, it is possible to find little gems like this organic wine from Cantine Europa. Pure Grecanico, from the vineyards of Trapani, skilfully worked to obtain a fresh sparkling wine that can be enjoyed on a thousand occasions. The grapes are harvested in the first ten days of August when they still retain a good level of acidity. Quickly brought to the cellar, they are gently pressed and immediately refrigerated. Vinification is thermo-conditioned to enhance the freshness of the fruit and, once the first fermentation is complete, the base wine undergoes the so-called "presa di spuma" in an autoclave. Before reaching the bottle, the sparkling wine remains in the autoclave for about two months. The result is a deliciously fresh bubble, with a wide range of fruity and floral sensations. Excellent as an aperitif and in combination with simple fish dishes.
