Cantine Nicosia's "Specialities" complete its varied range capable of satisfying every drinking occasion. This sparkling white wine, Juculano, is one of them. Its name recalls the playful, exuberant and lively character of this wine produced from Catarratto grapes, the most widespread white grape variety in Sicily. Harvesting, by hand in boxes, begins in September. The grapes are cold macerated for 24 hours before being softly pressed to obtain the must, which is then fermented. At this point, the wine is placed in hermetically sealed tanks, where the natural transformation of the residual sugars takes place and the consequent formation of a light perlage. At the end of this sparkling phase, the wine rests in stainless steel tanks and for about 2 months in the bottle. To the eye it has a beautiful straw yellow colour with brilliant reflections. The nose reveals an intense bouquet, with floral hints and notes of white flesh fruit. On the palate, however, it is above all fresh and fruity, with a captivating almond finish. It is excellent both as an aperitif and to accompany seafood dishes, shellfish, fried fish and vegetables in tempura.

Native grape varieties and international varieties well adapted to the climate of Sicily, coexist to give life to wines of great personality, produced in full respect of the environment. The headquarters of the winery are still in Trecastagni, while most of the company's vineyards are not far away, at the foot of Monte Gorna, one of Etna's many extinct craters. The company also owns vast tracts of land in Vittoria, in the Ragusano area, where Cerasuolo DOCG is produced, and directly manages large expanses of vineyards in the rest of Sicily.
