Ortrugo dei Colli Piacentini DOC, sparkling, twine stopper. What could be more traditional than this great local wine, which is still offered with the classic cork closure, kept in place by a skilfully tied string. A sort of "ante litteram" cage made to resist the moderate internal pressure of the bottle which, especially in the past, otherwise risked "bursting" in the cellar. Nothing serious, of course. But a real crime for those who were waiting for the right occasion to uncork that bottle and celebrate. The process in the cellar begins with a phase of cryo-maceration, which allows all the best aromas and flavours to be extracted. This is followed by the fermentation phase, with selected yeasts, and a slow re-fermentation in autoclave that completes its fragrance, while giving it a delicate petillant taste. Straw-yellow colour tending towards greenish. The nose reveals intense, very fresh aromas, with clear hints of balsamic herbs, such as mint, and fresh flowers. In the mouth it is delicate and characteristic with a pleasant bitterish finish. It is the wine to drink in company. Ideal with hors d'oeuvres, it is also an excellent accompaniment to dry pasta dishes and risottos. For a local pairing, it should certainly be tried with the delicious fried eel.
