The grapes, generally harvested around mid-September, are brought quickly to the cellar to preserve all the goodness of the initial fruit. This is how Bottega's signature Millesimato is born. From a careful selection of Glera, Chardonnay and Pinot grapes, harvested just when they have reached the right degree of ripeness. In the winery, the grapes are then destemmed and softly pressed, to separate the skins from the must, and cold decanted to eliminate all impurities. This is followed by the first fermentation, in temperature-controlled steel tanks, and the subsequent passage into an autoclave for frothing. At the end of this process, the wine is cold stabilised, filtered and bottled. The result is a bubble of great pleasantness, in Brut version, therefore dry but not too dry.
