  • Sensations Colour: ruby red with slightly garnet reflections. Nose: complex and spicy with hints of cloves, pepper, eucalyptus, tobacco and vanilla and caramelised notes at the end. Taste: dry, savoury, fruity with aromas of dried figs and a finish of great elegance.
  • Vinification After destemming-crushing of the grapes, the must is transferred and placed in special temperature-controlled vinifiers. Alcoholic fermentation with maceration lasts 7/8 days at a constant temperature of about 26 °C in order to best extract the aromas of the grape variety. During maceration, automatic pumping-over is carried out periodically to extract the polyphenolic substances present in the skins. At the end of alcoholic fermentation, malolactic fermentation starts immediately in stainless steel tanks at a temperature of 18 °C. Once fermentation is complete, the wine is placed in 75 hl French oak barrels and in barriques where it rests for about 12 months. After a further month in stainless steel, the wine is bottled and aged for six months before release.

    I Tre Vescovi Barbera D'Asti Sueriore DOCG 2021
  • This is one of the flagship wines of the beautiful Piedmontese winery. For about 20 years it has been the tangible result of how, thanks to a unique terroir and the experience of talented local winegrowers, it is possible to create a high-quality Barbera that is easy and good to drink, but above all affordable. The unique name refers to an extraordinary Barbera "cru", the Tre Vescovi, which is located where the dioceses of Acqui Terme, Alessandria and Asti meet. For processing, the grapes are harvested by hand when perfectly ripe. This is around the third decade of September. The vineyards, which are about 30 years old, produce very high quality, rich and concentrated bunches. The transformation takes place in steel, in thermo-conditioned tanks. Then, immediately after malolactic fermentation, the wine is matured in 75-hectolitre French oak casks and partly in barriques. This phase lasts for about 12 months, after which the wine is once again put into steel tanks before being bottled for a further six months of refinement before being finally put on the market. A wine of great pleasantness and typicality, this Barbera was born to accompany with satisfaction many of the typical dishes of the region. Starting from the classic tagliatelle with mushrooms, to ravioli "plin" with meat sauce. Perfect with main courses of red meat, such as braised and roasted meats, it is also a perfect accompaniment to game.

    In 1959, the year it was founded, there were only 19. Today, in 2021, there are 192 members of the Cantina Cooperativa Vinchio e Vaglio Serra. In total they manage with care and passion about 450 hectares of vineyards. In particular Barbera, the so-called "Rubino di Vinchio", but also other typical local vines, such as Dolcetto, Cortese, Grignolino, Nebbiolo, Brachetto, Moscato, Freisa and Bonarda. To this dense group of autochthonous vines, i.e. typical of the area, we can also add the international vines that are best suited to the hills of Piedmont, such as Pinot Noir, Chardonnay, Sauvignon and Viognier. The vineyards, most of which are on very steep slopes, make the work particularly demanding but, at the same time, guarantee optimal exposures that result in perfect ripening. The quality of the harvested grapes is, of course, also influenced by the nature of the soil, whose mineral components guarantee the production of high quality wines. The winery, on the other hand, is equipped with state-of-the-art equipment and modern winemaking facilities, and also has a large barrique cellar, built into the hillside, which guarantees constant and natural temperature and humidity. Here there are French oak barriques and barrels of various capacities, where the wines can age slowly. For as long as necessary.
