It is by no means an ordinary wine. And this is also why we like it so much. The one proposed here by Abbona is an excellent Alta Langa DOCG, Extra Brut, super dry and super gastronomic. In the sense that, as often happens with these quality classic method bubbles, as well as to celebrate happy moments, they can be brought to the table to accompany high level lunches and dinners. But let's proceed in order. This wine comes from grapes harvested in the company's vineyards, with plants over twenty years old. Fruits able to give great complexity and concentration, suitable to produce a high quality sparkling wine, fresh, aromatic and with great persistence. The basic cuvée uses 65% Pinot Noir and the rest Chardonnay. It starts with a soft pressing of the grapes to obtain free-run must, with a yield of about 50%. This is followed by the first alcoholic fermentation and refinement for about 7 months. Then comes the bottling and the draught phase, with the addition of selected yeasts, for a long refinement in the bottle for 48 months. At that point, once the desired complexity has been achieved, we proceed with the dégorgement and the filling of the bottle, without adding liquer but only with the same wine. In the glass it has a beautiful straw yellow colour with intense golden hues and a fine and persistent perlage. On the nose, hints of yellow fruits and flowers stand out. Then bread crust and yeasts, due to the long maturation in the bottle. In the mouth it is full, rich, creamy. Good acidity, freshness and flavour.
Celso Abbona, great-grandfather of the current owners of the company, was among the first of his generation to believe in the potential of the Dogliani area and to promote Dolcetto, the grape that on these hills was able to reach excellence. This is how the company was born, with a lot of hard work and passion. It was Celso himself who planted the legendary vineyard of Bricco Doriolo, in the hamlet of Santa Lucia di Dogliani, which today represents one of the most prestigious cru of the denomination. Over the years, and with the entry of new generations, the company has grown and expanded, particularly towards the Langhe. Those were the years when the challenge of Barolo was still to be won. The first plots of land were purchased, allowing the company to harvest and bottle the first Nebbiolo. And it was a success. Today, the new generations carry on the work, continuing with the same commitment to produce great wines of the territory. The company can count on about 52 hectares of vineyards in the municipalities of Dogliani, Monforte d'Alba and Novello, all conducted in a sustainable way, to produce good wines, in full respect of nature. Many of the family's vineyards, still worked by hand according to methods handed down through generations, are made up of vines that are up to 60 years old. They are plants of rare beauty and capable of expressing the maximum quality of their terroir.
