    • Sensations The 2017 vintage, characterized by a warm climate, still maintains an excellent freshness and the typical Mediterranean style of Cervaro dell' Sala. The nose is characterized by open notes of chamomile and flint. On the palate, it is savoury, with the characteristic delicate aromas of vanilla and butter which combine elegantly with hints of exotic fruit to compose a well-defined bouquet. "A wine that is still young and will evolve well in the years to come.
    • Vinification The winemaking cellar is built to take full advantage of the principle of gravity and allows the management of the grapes and their maceration without any mechanical intervention from pumping them. The harvesting of the grapes is carried out in the early hours of the morning so that the fruit reaches the cellar intact and not stressed by the high temperatures of the day. The must coming from pellicular maceration of the grapes at 10 ?C for about four hours, is transferred by gravity into decantation tanks where they clarify before being transferred into barriques. Here the alcoholic fermentation takes place, followed by malolactic fermentation. Usually after five months the Chardonnay is ready to be transferred again in steel to join the Grechetto, which instead is vinified separately and without wood. After bottling, the Cervaro dell' Sala refines in the bottle for a few months in the historic cellars of Castello dell' Sala.

      Thanks to the warm conditions of the vintage, Cervaro della Sala takes us back to a time when this wine was denser, more extracted and packed with glycerin-rich fruit flavors like apricot and peach. Of course, the Antinori family has since moved beyond that style, most notably by tweaking the oak regime used on this wine. But the thickness and richness of the fruit in this dry and hot vintage takes us back in time with a hint of sweet nostalgia. This wine is fresh and spicy with stone fruit, mature apricot, honey, saffron and toasted almond.
