    • Sensations Light golden yellow. Clear and fresh citrus notes, lime and grapefruit, musk and mimosa. Soft white supported by a refreshing acid structure. Mouth thirst quenching but also full and decisive with returns of yellow peach, acacia honey, fresh almonds and hazelnuts. A finish enlivened by an intense, fleshy, passionate and Mediterranean marine flavour.
    • Vinification The grapes, harvested by hand in small containers, are gently pressed to prevent the golden skins from darkening the must, which is cooled to 10°C in order to promote natural clarification. The first part of the alcoholic fermentation takes place in stainless steel tanks and the temperature is always kept around 18°C. The fermenting must is then placed in barriques where fermentation is completed. At the end of fermentation, the wine rests sur lies in French oak barriques, 50% new and 50% 2nd passage, for approximately 12 months.

    • Only great wines can be dedicated to a great woman. Like this Teresa Manara, wife of the company founder, who in years that were not easy, for love decided to leave her homeland to seek her fortune in the heart of Puglia. This incredible wine, the result of a late harvest of Chardonnay grapes, is also dedicated to Teresa Manara. The grapes, harvested by hand in small containers, are gently pressed to prevent the golden skins from darkening the must. The first part of the alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Then, the still fermenting must is racked into barriques to complete its transformation. Finally, at the end of fermentation, the wine rests 'sur lie', on its yeasts, in French oak barriques, half new and half second-passage. After about 12 months, the wine is finally ready to be bottled. Excellent immediately, this late harvest Cantele is capable of evolving naturally even for 8 or 10 years. Provided, of course, that it is stored well, in a cool place and protected from light. Suitable as an aperitif, it is the white wine to serve when you want to treat yourself to a special evening. Excellent with all fish dishes, it has sufficient body and character to also stand up to pairing with white meat main courses.

A story in reverse since its beginnings when, in 1950, Giovanni Battista Cantele, from Pramaggiore in the Veneto region, and his wife Teresa Manara, from Imola in Romagna, decided to move from northern Italy to Puglia, in the province of Lecce. The founder of the family, it must be said, was already involved in the bulk wine market. The second path backwards is linked to the birth of the company. We are in 1979 and, in this case, the decision is to start with the marketing of bottled wines only, and then, over time, move up through all the stages of the production chain. The first harvest, in fact, dates back to 1992 and in 1999 the winery was created. Since then, the Cantele family's activities have continued unabated, until 2002, when the new winery was created in Guagnano, in the heart of the Salice Salentino DOC area. Today, the company is well established in the main foreign markets as well as at home, and in particular is among the most appreciated wineries in its region.
