50% Chardonnay and 50% Sauvignon Blanc, this Florence is not a Tuscan white wine. It comes instead from one of the most interesting areas for quality viticulture. We are talking about South Africa, and in particular about the region of Stellenbosch, where the climate is mitigated by the highlands and the oceanic currents coming from the South Pole. In Devon Valley, Aaldering Vineyards & Wines works its vineyards following the principles of organic and biodynamic farming. In the middle of September the best bunches are harvested by hand in order to be vinified separately in steel tanks. This is followed by a long period of rest on thin lees for about 5 months. Fresh and with a typical vegetal note, this South African white wine strikes for its crisp acidity and long mineral finish.
