There is only one golden rule in the world of sommeliers that nobody dares to question: with desserts you should drink sweet wines. And among the most fascinating wines in this category, we cannot fail to mention the classic Moscato d'Asti DOCG. The Palás produced by Michele Chiarlo, in particular, is a wine of extreme pleasantness, made from grapes that come from vineyards in the heart of the area historically best suited to this variety. After a soft pressing, the must is stored in tanks at -2l degrees C to maintain the integrity of the aromas. This is followed by a delicate sparkling process in temperature-controlled autoclaves until 5 degrees of alcohol are reached. Before bottling, the wine undergoes a micro-filtration to give it transparency, purity and to avoid any further fermentation of the lees.
