  • Sensations It has a prestigious, luminous straw-yellow coat, furrowed by fine, persistent bubbles. On the nose it delicately and progressively releases shy and fragrant hints of citrus fruit, apple, white peach and exotic fruit, enriched by memories of pastry, echoes of dried fruit and mineral trails. The taste, lively and darting, invites the drink by virtue of its irresistible freshness, vibrant and well dosed. The drink is therefore slender and inviting and extends to a pleasant fruity finish.
  • Vinification The Chardonnay, Pinot blanc and Pinot noir grapes are vinified separately. Alcoholic fermentation takes place in temperature-controlled steel tanks, where the wines remain until the following March. This is followed by seven months of ageing, which are necessary for the wine to clarify, mature and bring out the character of the original vineyards. The wines are blended with the reserves of the best vintages (at least 20%). The wine is matured on the lees for an average of 25 months. Disgorgement takes place in the absence of oxygen using a unique system designed and patented by Ca' del Bosco, which avoids oxidative shocks and further additions of sulphites. Each bottle is uniquely marked to guarantee traceability.
