Billecart-Salmon is located in Mareuil-sur-Aÿ, a commune classified Premier Cru, in the region of the Marne Valley. It was founded in 1818. The result of the union between Nicolas François Billecart and Elisabeth Salmon, today the company is managed by François and Antoine Roland-Billecart, the sixth generation of the company. The Maison can count on around one hundred hectares of vineyards, which cover around 50% of the annual grape requirement. In the cellar, ancestral vinification methods coexist, in small fifty-hectolitre wooden barrels, with modern techniques of must refrigeration and low-temperature fermentation.
