Throughout its history, the bodega has undergone major adaptations to meet the needs and demands of the market. For example, a large area has been built to house the barrels and the finished product. In these rooms, temperature and humidity are kept under constant control to ensure the perfect preservation of the wine. Covitoro has a production capacity of about 4.5 million kilos of grapes per year, and a maximum storage capacity of about 6 million litres, as well as 1400 American and French oak barrels.
