Pierre Gimonnet & Fils’ Oenophile Champagne is a wine that accepts no compromise. Dedicated to those who, as the name suggests, love wine in its purest and most intellectual form. We are in Cuis, in the kingdom of the Côte des Blancs, where the Gimonnet family has carried on its tradition since 1750. Here, chalk is not simply a geological detail but the very soul of the wine itself. Oenophile is the ultimate expression of this philosophy. A technical challenge where grape quality must be absolutely flawless, because there is no added sugar to soften or disguise any rough edges. This Champagne is a Blanc de Blancs crafted from a blend of prestigious crus. The cuvée draws 67% of its fruit from legendary Grand Cru villages such as Cramant, Chouilly and Oger, while the remainder comes from the Premier Crus of Cuis and Vertus. It is a millimetric balance between the structural power of the most celebrated terroirs and the razor-sharp freshness of Cuis, all presented in a Brut Nature style. After hand harvesting and gentle pressing, the must ferments at controlled temperatures. Malolactic fermentation follows, along with eight months ageing in neutral tanks to preserve the purity and fragrance of the fruit. After cold stabilisation and a light clay filtration, the wine enters a long bottle ageing period of at least three years on fine lees. At disgorgement, carried out three months before release, no dosage liqueur is added. The result is a true “pas dosé” Champagne: direct, vibrant and uncompromising. The nose is deeply mineral, almost saline, before revealing crisp apple and citrus peel notes. On the palate, minerality takes centre stage, making the wine lean, lively and extraordinarily precise. Despite the absence of sugar, the complexity is remarkable, leading into a long, dry and distinctly chalky finish. Perfect with top-quality sushi or crispy fried calamari, where its sharp acidity cleanses the palate with surgical precision.
Today we are in the heart of the Côte des Blancs, that blessed strip of chalk-rich land where Chardonnay is not simply a grape variety but almost a religion. This is where Pierre Gimonnet & Fils shines brightest. Their story is not one of a vast commercial maison, but of a family of growers whose roots in the region stretch back to 1750. The real turning point came in 1935, when Michel Gimonnet decided to stop selling grapes to the major Champagne houses and begin vinifying his own wines. It was a bold decision that gave birth to a now legendary style: grower Blanc de Blancs of remarkable character. Today the estate is run by brothers Didier and Olivier Gimonnet, who oversee around 28 hectares of vineyards with near-obsessive precision. They are among the very few producers in Champagne whose holdings are located entirely within the Côte des Blancs, across prestigious villages such as Cuis, Cramant and Chouilly. The philosophy here is all about freshness, finesse and verticality. To achieve this, the winery embraces what could best be described as “precision craftsmanship”. One of their most distinctive practices is the ageing of reserve wines exclusively in bottle, preserving their aromatic vibrancy intact. This allows them to create blends that maintain outstanding stylistic consistency year after year. Many of the family’s vineyard parcels are over 40 years old, with some approaching a century in age. These “old ladies” produce fewer grapes, but the fruit they deliver carries extraordinary aromatic concentration and natural structure without the need for heavy-handed winemaking.
