  • Sensations brilliant ruby red wine with a fresh nose of redcurrant and raspberry. On the palate, it has a surprising concentration of red berries with a hint of pepper, a full body and a long, invigorating finish
  • Vinification This 100% Cabernet Franc is made from 25-year-old vines grown biodynamically in the Bourgueil region. To favour the expression of terroir and vintage, a natural approach is adopted both in the vineyard and in the cellar. After manual harvesting, the grapes are sorted on arrival at the winery, then destemmed and sorted again. These ripe, healthy grapes require very little intervention: fermentation is triggered by indigenous yeasts, toasting is gentle and the use of sulphur is extremely moderate. The wine is matured in old oak barrels for about 12 months. All stages of vinification are carried out according to the lunar calendar.

  • Bourgueil AOC Franco de Porc is an organic red wine produced in the Loire by Domaine de la Chevalerie. 100% Cabernet Franc grapes and a natural winemaking approach. These are the key ingredients in the production of this French wine with great personality. The grapes come from 25-year-old vineyards located in Restigné, in the Bourgueil region. The soils here are composed of clays and calcareous sands, which give the wine a distinctive minerality. Viticulture is biodynamic and winemaking natural. The grapes are harvested by hand and fermented with indigenous yeasts. The wine is then aged in old oak barrels for about 12 months. In the glass, it has a brilliant ruby red colour. On the nose, it reveals fresh aromas of redcurrant, raspberry and pepper. In the mouth, it is full-bodied, with a surprising concentration of red fruits, velvety tannins and a long, invigorating finish. A versatile wine, it goes well with a wide variety of dishes. Perfect with red meats, especially spiced pork, it also goes well with goat cheeses.

Today, Emmanuel Caslot carries on the Domain tradition with dedication and expertise, following the sudden death of his young sister Stéphanie in 2021. The principles of sustainable agriculture are applied in the vineyard, with the utmost respect for the environment. Low yields and manual harvesting guarantee grapes of the highest quality. In the cellar, vinification takes place naturally, with spontaneous fermentation and ageing in wood. In addition to Cabernet Franc, the estate also produces the typical fresh and mineral Sauvignon Blanc.
