    Touraine Méthode Traditionnelle "J’Ose les Fines Bulles" Brut 2019
  • Touraine AOC, Méthode Traditionnelle, J'Ose les Fines Bulles Brut is one of the good wines offered by Domaine Bois Vaudons. The grapes, Menu Pineau, Chardonnay and Chenin Blanc, come from vineyards in the Touraine region. Here, the soils are clay and limestone, and the microclimate is perfect for growing the three grape varieties that make up this blend. Specifically, 60% is Menu Pineau which gives structure and character, 30% is Chardonnay which gives elegance and finesse, while 10% Chenin Blanc adds freshness and acidity. Vinification takes place according to the Classic Method, with re-fermentation in the bottle and ageing on the lees for at least 24 months. The result is a sparkling wine of great complexity and refinement. On the nose, it offers a floral and fruity bouquet, enriched by notes of citrus fruits, toasted bread and yeasts. In the mouth, however, it is fresh and lively, with a fine and persistent bubble. Excellent as an aperitif, this sparkling wine goes well with light first courses and fusion cuisine.

The vineyards of Bois Vaudons insist on a rich and complex terroir, characterised by clay, limestone and sandy soils. An ideal habitat that allows the cultivation of high quality grapes. Among the rows of Bois Vaudons are some Pineau d'Aunis vines that, with their over 100 years of age, represent a true oenological curiosity, as well as guaranteeing the production of 'few' grapes of unequalled concentration and complexity. Jean-François Mérieau is a winemaker who believes in respecting terroir and tradition. In the vineyard, low yields and manual harvests are applied, while in the cellar, vinification takes place naturally, with spontaneous fermentation and minimal intervention.
