  • Location Reims
  • Grapes Pinot Meunier 70%, Chardonnay 15%, Pinot Noir 15%
  • Sensations Champagne Brut Premier represents the typical expression of the style of this historic house. A balanced and mature sip, where the different notes of minerality and structure that are given by the different soils on which the vines are raised seem to be felt. A rich nose of yellow fruit, golden apple and tropical fruit. From the sip, it is subtle, delicate, fresh. The acidity accompanies the final stretch with remarkable persistence
  • Vinification This champagne is made from three different grapes (Pinot noir, Pinot Meunier and Chardonnay) whose vineyards are located in the premier crus of Chamery, Vrigny and the Montagne Coulommes. Alcoholic fermentation lasts over 9 months and is carried out partly in steel and partly in oak barrels. Then the wine follows the normal rules of winemaking according to the Champenoise method. Reserve wine from the Maison's historic old vintages is added, and then the wine is left to rest on its lees in the bottle for at least 48 months, or 4 years.

    Champagne Ponson Premier Cru Brut
  • Committed from a very young age to the development of his "garden vineyard," he took on the production of the family maison when his father Maxime Ponson died. First, he undertook a long process of converting the vineyards to organic farming. After that he devoted himself to personalizing the wines produced, playing on finesse and envelopment. This Champagne, in particular, is made from the region's three grape varieties, with a large majority of Pinot Meunier, which is present in the blend at about 70 percent. Pinot Noir and Chardonnay round out the mix with virtually equal percentages. The vineyards are located in the Premier Cru villages of Chamery, Vrigny and Coulommes-la-Montagne. In the winery, processing begins with a long phase of alcoholic fermentation of the bases, carried out partly in steel and partly in oak barrels. Then the wine follows the normal rules of winemaking according to the Champenoise method. A portion of reserve wine is then added, the result of old historic vintages of the Maison, and then rested on its lees, in the bottle, for at least 48 months. The result is a Champagne characterized by a rich nose of yellow fruits, Golden apple and tropical fruits. The sip is balanced and ripe, subtle, delicate and fresh, thanks to the perceptible acidity that accompanies the finish, making the wine remarkably persistent.

For those who think Champagne is "an old man's wine," Maxime Ponson may be a good opportunity to reconsider. Maxime Ponson, in fact, is not even 30 years old! But he has grit to spare and unwavering determination. In his early twenties he began working a small portion of his father's vineyard, Pascal Ponson, asking for that to be for him a kind of legacy in advance. And so since 2009, Maxime, in his small vine garden, has used no systemic products, no chemistry, just nature. The processing of the grapes takes place in the family winery. Its production includes Champagnes of great freshness and above all excellent drinkability.
